Here’s another fast, healthy and tasty dinner/lunch recipe, this time with a hint of Arab cuisine.
This is a fresh recipe: Summerstyle (still some summer to go!) and will take you no longer than 20 minutes to prepare!
Salad (one serving):
150 gr fresh spinach
Meat:
-250 gr lean minced meat (beef or lamb!)
-fresh cut coriander
-1 or 2 cloves of crushed garlic
-4 tbsp Ras el Hanout*
-2 tsp ginger powder
-add (LO)salt and black pepper to own taste (well.. you can add any spice to own taste of course)
Sauce:
-3-4 tbsp quark/curds
-fresh cut mint leaves
-lime juice (2 tbsp)
Extra:
If you really really really need a side dish: I like roasted or toasted sweet potatoes with this recipe (the sweet goes well with the bitter spinach, spicy meat and sour sauce). If thats too much for you, try quinoa. Or.. taco shells; an obvious choice with minced meat.. but not the healthiest one ; )
Okay, so that took me 15 minutes to cook. 15 minutes to eat. 10 minutes to write about. And now I’m off to yoga haha! Have a great eve!
*Ras el Hanout (meaning ‘Top of the shop’) is an Arab/North African mix of spices usually containing ground chili peppers, cumin, coriander, turmeric, cardamon, cinnamon, clove and pepper. Sometimes this mix is just referred to as ‘couscous powder’. In my opinion this is one of the spices everyone should have in their kitchen (like Indian Curry Massala and basic ground chili pepper): it’s what makes fast cooking easy and tasty, and hugely diverse : )
